Ingredients:
Hot honey:
- 1 cup (250ml) honey
- 1-2 Tbsp (15-30ml) fine chilli flakes (we used Korean gochugaru flakes)
- 2cm knob of fresh ginger, sliced into rounds
- ¼ – ⅓ cup (60-80ml) apple cider vinegar
- ⅓ cucumber
- 1 cup (250ml) full-cream plain yoghurt
- Grated peel of 1 lemon
- ⅓ punnet (7g) each fresh dill and mint, chopped
- Salt and milled pepper
- Two spanspek melons, peeled and cut into wedges
- Two balls (125g each) of burrata (fresh mozzarella) or use crumbled feta
For serving:
- Handful spring onion curls or slices
- Handful of fresh coriander and mint
- Sprinkling of sesame seeds
Method:
Heat honey, chilli flakes and ginger in a pot over medium heat. Stir for 3-4 minutes while heating, keeping a close eye not to let it boil. Turn off the heat and allow it to infuse for 10 minutes. (Heat up slightly again if honey has thickened up).
- Add vinegar and stir to combine evenly.
- Strain the mixture through a fine sieve, adding an extra 1-2 tsp of chilli flakes if you prefer a good kick.
- Finely grate cucumber and squeeze over a colander to drain excess liquid.
- Combine cucumber, yoghurt, lemon peel, dill and mint. Season and spread on a platter.
- Top with spanspek wedges. Drizzle with hot honey just before serving, garnished with spring onion, herbs and sesame seeds.
